Hatch Green Chili Grits

While in New Mexico on the Carnies: Traveling Meat Circus trip, we were able to get fresh Hatch, NM chilies. We used these chilies to create a southwest meets southeast green hatch chili grits.

Instructions
  1. Sauté the chiles in the bacon fat.
  2. Add 2 cups water.
  3. Bring to a simmer and whisk in 1/2 cup of grits.
  4. Stir till they are cooked.
  5. Season with salt and pepper as you like and add a 1/4 cup white cheddar cheese.
  6. Serve with two center cut pieces of bacon. We split a normal slice in two pieces.
